52 Weeks of Simple Meals… Sound interesting?

I have been a frequent visitor to the Heavenly Homemakers blog, by Laura Coppinger for years. Recently I discovered something new, to me… the Simple Meals 1 Year Subscription.
As my children were growing up in the late elementary to early teen years, we often enjoyed preparing and eating many of Laura’s recipes. We also often tweaked and adapted the recipes for our dietary needs and flavor preferences.
In the past year the blog and social media world has been talking about meal services. While many people speak highly of them, I have no interest in having someone send us a box of food pouches with directions for meal preparation. While it just doesn’t appeal to me, it sounds like it is a great fit for many people.
My meal planning is built around a variety of favorite meals, days of the week, and celebrations. On an ideal planning day that’s how it goes anyway. And then Life Happens. Like this past weekend. I left Friday afternoon and planned to be back Sunday by 3:00. And actually arrived home at about 6:30. Meal planning only extended to Tuesday.
There are weekends where we can be worn out, or simply out. Kids’ activities, games and many other opportunities happen. And when Monday afternoon rolls around, everyone wants to know what’s for dinner.
